Homemade Taco Seasoning

I've  been wanting to try making my own taco seasoning for ages, but I still had some I wanted to use up, so I just hadn't gotten around to it.  Then, last month when I started planning meals for Camp Outreach, I realized that there is wheat in the taco seasoning I had.  Now, ordinarily I might not think a thing of it, but we had some people with gluten sensitivities who were going to be there, and I thought it best to avoid the wheat altogether in the taco meat.  So, I finally got around to making some taco seasoning.

I started looking on Pinterest and came across this recipe.  It's called the 'best taco seasoning recipe ever' so I figured it ought to be good.  Apparently she tried a lot of taco seasoning recipes from around the internet, and this is the one

Taco Seasoning

Ingredients:
  • 1 tablespoon chili powder
  • ¼ teaspoon garlic powder
  • ¼ teaspoon onion powder
  • ¼ teaspoon crushed red pepper flakes
  • ¼ teaspoon dried oregano
  • ½ teaspoon paprika
  • 1½ teaspoons ground cumin
  • 1 teaspoon sea salt
  • 1 teaspoon black pepper
Directions:
  1. Measure all ingredients into glass jar; cover and shake to mix well.
  2. Use 2 T per 1 lb. of hamburger for tacos. (or adjust to your taste)  

Seriously, it's that easy - mix together spices you probably already have on hand (I had everything except usable onion powder.  Why is it that onion powder always, always, always turns hard as a rock?) and you get a taco seasoning mix that is really good.  I think it has a better flavor than the store bought kind - and no weird ingredients in there, either. 

I will definitely be making and using this taco seasoning from now on. I may not even finish that little bit of the store-bought seasoning I have left...

Chile Lime Salmon Tacos

I pinned this several week ago because these tacos just looked so good.  Seriously - yum!

Mine didn't turn out looking nearly as nice as the ones in the picture, but they were definitely yummy.  And easy.  Gotta love an easy recipe that is also delicious.  I will definitely make these again.


Chile Lime Salmon Tacos

Ingredients:
  • 1 can (14.75 oz) Salmon, drained and flaked (remove skin & bones as desired)
  • Juice of 1 fresh lime
  • 1 tablespoon taco seasoning (or chile powder)
  • salt to taste
  • 8 soft corn tortillas or small flour tortillas
  • 1 cup shredded cabbage
  • Cilantro
  • Sliced green onions
  • White Sauce
    1/2 cup sour cream
    1 tablespoon hot sauce
Directions:
  1. Sauté salmon with lime juice and taco seasoning to warm through, about 2 minutes.  Add salt to taste.
  2. Meanwhile, combine sour cream and hot sauce; stir well.
  3. Fill warm tortillas with salmon mixture; top with cabbage, cilantro and green onions. Serve with your favorite salsa and the white sauce.

The original recipe said that the white sauce was optional, but don't skip it.  It really adds to the texture and flavor of the tacos.  I suppose you could use plain sour cream, but the hot sauce just gives it a little kick.  You could also probably stir about half a teaspoon or so of your taco seasoning or chile powder - whichever you use - into the sour cream for the sauce.


I used taco seasoning for my tacos, but I'm going to try the chile powder next time, just to see which one we like best.  Did I mention that these are super easy?  And super yummy?

Make Your Own Taco Seasoning

I buy my Taco seasoning in the big containers from Sam's Club.  It's definitely cheaper than buying the packets at the grocery store, and there isn't much chance of running out.  Still, it doesn't hurt to have this recipe on hand, just in case

Taco Seasoning
  • 1 T chili powder
  • 1/4 tsp. garlic powder
  • 1/4 tsp. onion powder
  • 1/4 tsp. crushed red pepper flakes
  • 1/4 tsp. oregano
  • 1/2 tsp. paprika
  • 1-1/2 tsp. ground cumin
  • 1 tsp. sea salt
  • 1 tsp. black pepper
  1. In a bowl, combine all ingredients.
  2. To make tacos, use half the batch of seasoning with 1 pound ground beef and 1/4 cup water.

Even though I have plenty of Taco Seasoning, I'll probably have to try this just to see how it turns out.  (and if my taco seasoning has some of the ingredients mentioned in the related article (must read label), I may have to start making it all the time!)

Taco Dip

Ingredients:
  • 8 ounces cream cheese
  • 8 ounces sour cream
  • 1 lb. hamburger
  • 1 package taco seasoning mix
  • cheddar cheese, shredded
  • black olives
  • onions
  • tomatoes
  • 1 large jar salsa
Directions:

Mix cream cheese and sour cream; spread on bottom of pan. Brown hamburger; drain and add taco seasoning mix. Spread on top of sour cream, cream cheese mixture. Dice remaining ingredients and layer one on top of the other or just sprinkle them over the top. top with salsa. Better if refrigerated overnight. Serve with plenty of tortilla chips.

We used to have potluck lunches every once in a while at work. One of my coworkers brought this dip. It was devoured. We also all begged for the recipe and told her she had to bring this every time. It's a big hit every time I make it.
