Turkey Lo Mein
I found this recipe in a magazine several years ago. Of course I modified it to suit my tastes! It's really easy to make, and we all like it, so we have this quite often.
Turkey Lo Mein

Ingredients:

- 8 ounces ground turkey
- 1 cup chopped onion
- 1 cup thinly sliced carrots
- 1 tsp. minced garlic
- 2 packages (3 oz. each) chicken flavor Ramen noodle soup (with seasoning packets)
- 1 1/2 cups water
- 1 cup frozen green peas
- 6 cups coarsely shredded romaine lettuce
Directions:
- Put turkey, onion, carrots and garlic into a large skillet. Cook over medium-high heat 5 to 6 minutes, stirring often, until turkey is lightly browned.
- Break noodles into skillet. Stir in seasoning packets, water and peas. Bring to a boil, cover and cook 3 to 5 minutes until noodles and vegetables are almost crisp-tender.

- Stir in lettuce. Cook uncovered 3 to 4 minutes, stirring almost constantly, until lettuce is wilted, noodles are soft and carrots are crisp-tender.
- Serve over rice.
Pass the soy sauce and chow mein noodles!

many recipes in the world that there is just no excuse for using one twice if it's not something you really enjoy. Now, whether the rest of the family enjoys them or not is another story, but I try to add special notes about who likes what.
