Layered Chicken Enchilada Casserole

This is really easy, and tastes good, too. Instead of rolling the enchiladas up, you simply layer everything in.

Layered Chicken Enchilada Casserole

Ingredients:
  • 1 tablespoon vegetable oil
  • 1 medium onion chopped
  • 2 1/2 cups cooked shredded chicken
  • 1 (7 oz.) can diced green chiles
  • 1 (1.25 oz.) package taco seasoning mix
  • 8 corn tortillas
  • 1 (15 oz.) can kidney beans drained
  • 2 (8 oz.) cups shredded cheddar cheese divided
  • 16 oz. salsa
Directions:
  1. Grease 13x9x2-inch baking dish.
  2. Heat oil in large skillet.  Cook onion, stirring occasionally, until tender.  Remove from heat.  Stir in chicken, chiles and seasoning mix.
  3. Layer half of tortillas in prepared baking dish. Top with chicken mixture, beans and 1 cup cheese.  Layer with remaining tortillas.  Top with salsa and remaining cheese.
  4. Bake for 30 to 35 minutes @  350° or until heated through and cheese is melted.

This recipe is also very good made with hamburger instead of chicken.

Sounds too complicated.

We like our Lazy/Easy Enchilada Casserole.

We use some taco seasoned meat and mix it all up with some strips (torn or cut) of corn tortillas, shredded cheese, enchilada sauce, green chiles, and corn. My wife would put black olives in it, but I don't like those.

We top that with more cheese and put in the oven for about half an hour.

It's super easy. We usually use ground beef, but have also done it with cooked chicken or turkey.

I have an Lazy Mexican Casserole too! i think its basically what Craig does.

1 can refried beans
cooked taco meat, beef, chicken etc
green chilies, chopped onions, olives if you like them (yuck!) cilantro or other likely things if you have them
1 can pinto, black, adzuki, kidney, etc beans
salsa
shredded cheese

In casserole, cake pan, slow cooker, whatever (I use two 2 qt casserole dishes and freeze one for another day).

Layer all ingredients or, those that you have, in order listed, (refried beans first cuz its the only way you will get them as a layer).

Heat until bubbly, let sit for 10 minutes.
Serve with or without sour cream, fresh chopped onion and/or green pepper, tomato, cilantro, fresh salsa, shredded cheese

Scoop up with tortilla chips, serve over rice, fill soft tortillas, etc.
